EGG, HAM & CHEESE BROCCOLI BITES 

Hello dahlings! Hope you are enjoying the holidays! This time of year can be hectic, so here is a little dish I like to make to take one less thing off your plate!

This is my super easy “egg bite”…OR “egg bake” recipe you & your family will adore during the holidays or anytime. It’s perfect to make ahead if you have a house full of guests. Just pop in the oven & serve up with a side of fresh fruit. They are a must on Christmas morning when all anyone has time to do is tear into presents 😉 This little breakfast appetizer or main course will help you keep it simple, but still look like a beautiful brunch bite they will brag about for days!

We all love Starbucks egg bites, don’t we? Well I’ve been making them for years! Whether they are served in a ham cup like my Spinach, Ham & Cheese Frittatas that I love to make for guests, or just a little egg cupcake…it’s all deadly & you can’t eat just one!

EGG, HONEY HAM & SHARP CHEDDAR CHEESE BROCCOLI BITES

 

INGREDIENTS

  • 10 eggs
  • 1/2 cup milk
  • 1/2 cup grated sharp cheddar cheese
  • 1/2 cup ham cut into small cubes
  • 1/2 cup finely diced broccoli florets 
  • 1/4 cup scallions sliced
  • 1/4 chives

INSTRUCTIONS

  • Combined all ingredients in bowl 
  • Season with sea salt & cracked pepper
  • Whisk together
  • Pour into greased mini muffin pan
  • Bake 350 for about 15 minutes or until fluffy 
  • Garnish with chives
