THE GREEN SOUP


You’ve been asking for it and I’m giving it to you! My “Green Soup”…an antioxidant, detoxifying, weight loss soup that’s good for your heart & soul… just in time for St. Patrick’s Day! INGREDIENTS

  • 4 cups of water
  • 2 cups veggie broth (optional) or 2 more cups of water
  • 1/2 cup of white onion
  • 1 cup sliced celery 
  • 1/2 tri colored quinoa
  • 3 cups of cabbage in small chunks 
  • 2 cups of small broccoli florets, chopped
  • 1 bag of English peas (in produce section where all the gourmet veggies are & baby veggies & boil in bag veggies are located)
  • 1 bag of baby zucchini sliced (same section) 
  • 1 cup scallions sliced 
  • 3 cloves of sliced fresh garlic 
  • 1/4 cup olive oil Salt and Pepper 
  • 1/2 cup fresh corn cut off cob
  • 1/2 cup of shaved brussels
  • 1/2 fresh cut okra
  • 1/2 cup of baby french green beans, sliced julienne
  • 1/4 cup chopped kale, slivered
  • If corn is added …put in same time as cabbage 
  • Brussels can be added when broccoli is added
  • Add kale same time as zucchini 

INSTRUCTIONS

  • Bring water and broth to med boil
  • Add onion, peas, celery, cabbage, corn & quinoa first 
  • Add green beans
  • Simmer on medium high for 5-7 minutes 
  • Add broccoli & garlic
  • Cook additional 3 minutes
  • Add zucchini & scallions cook for 1-2 more minutes & remove from heat (Make sure everything is aldente to taste before serving)
  • Garnish with avocado & cilantro, a drizzle of olive oil & salt & pepper
