Shrimp Ceviche Stuffed Cucumbers


SHRIMP CEVICHE STUFFED CUCUMBERS

These little bite size beauties are one of my signature specialties. Perfect at any party…especially a Mexican themed fiesta for Cinco De Mayo! Super easy recipe to make & they always disappear faster than you can say “Uno mas, por favor!”

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 


 

SHRIMP CEVICHE

 

Ingredients

 

  • 1/2 lb of cooked shrimp
  • 1 large tomato or 8 plum tomatoes
  • 1 large avocado
  • 1 cup fresh lime juice
  • 1 clove of garlic
  • 1 cup of black olives
  • 2 cups of cilantro
  • 1 cup green onions
  • 1/4 cup white or red onions
  • 1/4 yellow pepper (optional)
  • 1 jalapeno pepper, seeded & minced
  • 2 tbs olive oil
  • splash of vinegar (optional)
  • splash of green Tabasco (optional)
  • sea salt & ground pepper to taste
  • 6 baby gourmet cucumbers for cutting & stuffing

 

Directions

 

  • Peel & de-vein cooked shrimp
  • Dice all ingredients (except cucumbers)
  • Finely mince garlic
  • Roughly chop cilantro putting a 1/4 cup aside for garnish
  • Mix in olive oil, vinegar, lime juice & tabasco & spices
  • Marinate for 10 minutes
  • While marinating, cut cucumbers in 2-3 inch pieces & spoon out the middle removing mostly the seeds
  • Take melon ball scooper & stuff a scoop full of ceviche in the center of each cucumber
